@diningwithdiana Wassup Wednesday ๐Ÿค˜๐Ÿป scored some major deals on @driscollsberry organic blackberries ($0.99/each!!) so I made something extra tasty with them ๐Ÿ˜‹ these were so good we demolished all the mini donuts already ๐Ÿ˜ฌ but theyโ€™re also super tiny ๐Ÿคท๐Ÿปโ€โ™€๏ธ no worries cuz we still have the loaf left ๐Ÿ™Œ๐Ÿป. Tender, fluffy, perfect amount of sweetness (not too much or too little), & d e l i c i o u s ๐Ÿ’ฏ.

Gf/v blackberry quinoa cornmeal loaf cake & mini donuts ๐Ÿ‡๐Ÿž๐Ÿ‡๐Ÿฉ.

BlackBerry quinoa cornmeal cake 
1/2 c unsweetened soy milk
3/4 tsp fresh lemon juice or ACV
1 chia or flax egg (1 tbsp ground chia seeds + 3 tbsp water)
3 tbsp avocado oil 
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 c quinoa flour
1/4 c cornmeal
1/4 c sugar 
3/4 tsp baking powder
1/4 tsp baking soda
Pinch of rose salt
6oz @driscollsberry blackberries
Turbinado sugar for topping

Preheat oven to 350F. Spray a mini donut pan and a 4โ€ loaf pan lined with parchment paper w/ avocado oil. Set aside. Mix milk with lemon juice, set aside. Mix chia egg and set aside. Once both items have curdled/gelled combine them along with the rest of the wet ingredients. Combine dry ingredients. Add wet to dry and mix lightly.

Spoon batter into mini donut pan and top each one with blackberries. Sprinkle with turbinado sugar. Bake for 12 mins then broil @500F for 1 min.

Pour the remaining batter into a 4โ€ loaf pan and top with blackberries. Sprinkle turbinado sugar on top and bake for 22 mins, broil @500F for 2 mins. This recipe can also be used to make muffins or a 6โ€ round cake. #feedfeed #diningwithdiana @thefeedfeed #berrytogether [AD]

@diningwithdiana a s i a n  p u t t a n e s c a ๐Ÿ pasta 2 nights in a row and thatโ€™s okayyy bc thereโ€™s no food rules up in hea ๐Ÿ™…๐Ÿปโ€โ™€๏ธ had some hot pot seafood leftover (had them frozen) & wanted to use it up so this was born โ˜๐Ÿป anything can be Asian-fied, just add fish sauce or soy sauce & voila = azn style ๐Ÿ˜๐Ÿ‘๐Ÿป. So instead of using anchovies, I used fish sauce cuz same same ๐Ÿ™Œ๐Ÿป Ps. I donโ€™t recommend this pasta shape bc the frilly part detaches from the bell ๐Ÿ™„.

1 tbsp @chosenfoods avocado oil
1 lb seafood mix
1 tbsp garlic, minced
Fish sauce, to taste
Black pepper
2 shallots, minced
3 heirloom tomatoes, diced
1/2 c water or broth 
1 c @mediterraneanorganic black olives, rinsed + drained, sliced
2 tbsp @mediterraneanorganic capers, rinsed + drained 
1 lb campanelle pasta, cooked & drained 
Chopped cilantro

Add oil to a large pan over med high heat. Add seafood along with garlic. Sautรฉ for 1 min. Season with fish sauce and black pepper. Remove and set aside. In the same pan add shallots and cook until slightly translucent. Add tomatoes. Cook for 5 mins then add liquid, olives and capers. Season with fish sauce. Add cooked pasta and combine. Adjust seasonings as needed. Add seafood and cilantro #diningwithdiana

Mix ingredients together and place into heat proof container. Pour hot water over oats, enough to cover by 1/4โ€. Cover with lid. Allow oats to sit for 5 mins. Add toppings of choice. Gently remove some of the seeds & pulp of the zucchini with a spoon then set innards aside. Salt the hollow zucchini halves with rose salt. Allow them to release its juices, about 10 mins. Pat dry with paper towel. Spray them with chipotle avocado oil and broil them on high @500F for 12 mins. Stuff them with the filling. #diningwithdiana

Kimchi mushroom tofu soup
1-2 tsp @chosenfoods avo oil 
1 small onion, diced
1 tbsp @betterthanbouillon ck base
1 c button mushrooms, chopped 
1 c @choiskimchi vegan kimchi and juice 
1 - 19oz block @traderjoes organic tofu, drained & diced
4 c water
Fish sauce, to taste
1 scallion, chopped

In a medium sized clay or cast iron pot over med high heat, add oil and begin to sautรฉ onions. Once slightly softened, add ck base. Stir to melt the base into the onions. Add shrooms along with kimchi + juice. Cook for 1 min. Add tofu & stir to combine. Add water to cover ingredients. Bring to a boil and reduce to a simmer. Simmer on low for at least 30 mins, the longer the more flavorful the tofu will become. Season with fish sauce. Top w/ scallions.

1/4 c rice flour
1/2 c @sanpellegrino_us sparkling water 
1 c @choiskimchi, chopped
2 scallions, chopped
Rose salt, as needed

Mix batter and allow to rest for 10 mins. Pour onto well oiled + preheated cast iron skillet over med high heat. Cook until edges get crispy. Carefully flip using 2 metal spatulas. Cook until no longer raw in the center

@diningwithdiana a l  f r e s c o  p i z z a s ๐Ÿ• Sundayโ€™s seem to be pizza days for us esp when we hit our local farmers market after mass ๐Ÿ‘ฉ๐Ÿปโ€๐ŸŒพ Picked up some deliciously sweet summer corn ๐ŸŒฝ from @alvarezorganicfarms and decided to make my own at home (since the pizza place closed suddenly)๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ I didnโ€™t want to mess w frozen crust so I grabbed a crusty baguette from @albertsons ๐Ÿฅ– Enjoyed these summery beauts on our deck outside & it was perfect ๐Ÿฅฐ. Also, family time > everything โค๏ธ.

French bread pizzas w/ @traderjoes applewood smoked salami, cultured cashew cheeze, cashew chive cheeze, no salt marinara, cherry toms, broccoli, corn, basil, EVOO, red pep flakes for โ€˜rents ๐Ÿฅ–๐Ÿ–๐Ÿง€๐ŸŒฑ๐Ÿ…๐Ÿฅฆ๐ŸŒฝ๐Ÿƒ๐Ÿ•๐ŸŒถ.

I slathered the bread with @sprouts no salt marinara and baked them @420F for 7mins. Removed and added remaining toppings. Baked for another 7-8 mins until cheeze was melty ๐Ÿ˜‹ #diningwithdiana

Itโ€™s been awhile since Iโ€™ve made my own nut butter or have I even ever? ๐Ÿค”๐Ÿ˜ณ I had a huge stash of almonds in the freezer [ps store your nuts + seeds in fridge or freezer so it doesnโ€™t go bad!!] so I decided to make some ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ cuz my kids eat pb ๐Ÿฅœ everyday & I wanted to change it up.
The best part ๐Ÿ‘‰๐Ÿป you get to add or not whatever you want ๐Ÿ’ฏ I like mine str8 up unsalted/unsugared/unoiled ๐Ÿ˜ฌ. Have you made your own nut butter?

Homemade roasted cashew almond nut butter [insert almond + cashew emoji ๐Ÿ˜] โ™ป๏ธโ€™d @mediterraneanorganic roasted red pep jar ๐ŸŒถ #diningwithdiana

Roasted cashew almond butter
1 c @costco raw cashews 
2 c @sprouts raw almonds

Roast nuts @350F for 10 mins, rotating half way. Allow nuts to cool slightly. A food processor works best, IMO. Place nuts into @cuisinart food processor (linked on my amazon faves โ˜๐Ÿป) and blend for a few mins. Scrape down sides and blend until nuts become smooth and nut buttery, took about 5 mins total. Yield: ~2 cups. BTS footage pinned on highlights under โ€œnut butterโ€ ๐Ÿ‘€๐Ÿ“Œ.

@diningwithdiana Happy Friyay, yโ€™all! Been a min since I made a pretty toast so here we are โ˜บ๏ธ Loaded this baby w/ the juiciest peach then the real cravings hit [swipe right] ๐Ÿ‘‰๐Ÿป. Made it 10x better w/ some chunks of Chianti infused salami ๐Ÿ˜ฌ NO RAGRATS ๐Ÿ’ฏ๐Ÿ•บ๐Ÿป. Also ate it in the car ๐Ÿš—. Currently at TJโ€™s on a mission to find some figs ๐ŸŒฐ.

Got this cultured cashew based cheeze from @vegansupplychinatown in Canada & it was creamyyyyy. Similar to the cashew cream cheese I typically make ๐Ÿ˜‹ We (the US) definitely needs to up their vegan cheese game ๐Ÿง€๐ŸŒฑ #diningwithdiana
