@zestmylemon Happy Friday! Lunch today is shredded rotisserie chicken with roasted turmeric chickpeas, cucumber, avocado and olives over mixed greens with a light drizzle of red wine vinegar and evoo. This is another GERD friendly meal and it really hit the spot! I packed it in a meal prep container because I knew I wouldn’t be able to eat the entire thing in one sitting so I can snap on the cover and nibble on the rest later. One of the keys to preventing acid reflux when you have a chronic condition is to eat smaller meals and snack throughout the day. Hope you’re having a great day!

@zestmylemon Grilled Honey Garlic Turmeric Shrimp with Almond Green Beans & Seven Grain Pilaf for dinner tonight! I’ve been working around the clock coming up with new ideas and trying to figure out what foods I can and cannot eat. I’ve had some bad moments of feeling hopeless, dealing with certain lifestyle changes and giving up certain foods I’ve always loved. I refuse to let this to this chronic acid reflux situation take over my life and I WILL get it under control. This dinner really hit the spot. It was flavorful, nourishing and GERD friendly. I was able to eat all of the shrimp, 1/2 of the green beans and only 1/3 of the grains but I feel full and satisfied. .
To make the shrimp add 1/2 lb. peeled and deveined shrimp to a bowl. Drizzle with 1 tsp. olive oil, and season with 1/4 tsp. garlic powder, 1/4 tsp. Turmeric powder, 1/4 tsp. onion powder and 1/2 tsp. dehydrated honey powder. Toss well to combine then grill shrimp 3-4 minutes on each side until pink and toasty. For the green beans heat olive oil in a pan. Add a minced clove of garlic, green beans and sliced almonds. Sauté until the garlic is FULLY COOKED and toasty and the green beans start to tender. Season with sea salt.

@zestmylemon Leftover flaked salmon from last nights dinner is what’s for lunch today with quinoa, avocado, olives and mixed greens with feta and a light drizzle of evoo and lemon. I’ve literally been eating this super slow and one small bite at a time in fear I may have another acid reflux flare up. So far so good! Luckily salmon and avocado two of my favorite foods don’t seem to effect me. Thank God! Hope your having a great day!

@zestmylemon I gotta tell ya, this ramen bowl was as good of a ramen bowl that you will ever get!  I used @mikesmightygood spicy pork Tonkotsu ramen soup made with organic craft ramen and it was some major noodle goodness. I added some pan seared pork belly and a soy marinated hard boiled egg to the delicious rich broth along with baby spinach, creamy avocado, chopped scallions, fresh cilantro, toasted sesame seeds and a generous squeeze of lime for a citrus burst of goodness. Topped it off with chili flakes for that extra kick and it was yummy yum yum! Easy peasy and delicious 😋. I love to use @mikesmightgood craft ramen in my recipes because the ramen noodles are organic, steamed not fried and the broth is super flavorful but not too salty. It's the ultimate comfort food!  Please note I made this spicy goodness before my GERD issues went into full force and it was delish. #MikesMightyGood

@zestmylemon I’m trying my best to start the new week off right. This morning after having a couple cups of organic “acid free” coffee (@tylersacidfreecoffee ) and getting the kids off to school I had a @siggisdairy drinkable yogurt which is easy on my stomach and filled with good probiotics. Then I went for a 2 mile nature walk around the lake. Going for a nature walk is not only good for exercise but also relieves stress and gives me an opportunity to enjoy the wildlife outdoors and spend some time alone. For lunch I decided to have veggie tuna lettuce wraps with a hard boiled egg, cucumber slices and half an avocado. With my recent GERD issues I am never sure what foods are going to trigger the acid reflux but since these foods never bothered me before I thought I would give it a try. The only issue I’ve encountered was getting the “full feeling” much more quickly then usual. I was only able to eat 3 of the lettuce wraps, 1/2 of the hard boiled egg, one slice of cucumber and 2 slices of avocado where in the past I could eat this entire plate without a problem. I’m going to try and eat smaller and more frequent meals to see if that makes any improvement.

To make the veggie tuna I used wild albacore tuna in olive oil. I added chopped carrot, parsley, capers, celery, tomato and a little bit of red onion then mixed in a few splashes of red wine vinegar. .
I’m not a fan of taking any type of medications and prefer natural healing remedies however my GERD flare ups have been so bad and nothing was working so I had no choice but to take Ranitidine yesterday which actually helped wonders. I haven’t taken any today yet. Hopefully with some time to heal I can eliminate that completely. The products and brands in this post are not sponsored and they truly work for me. @zestmylemon I’ve been testing out different foods 🥫🍅🍋🥦 and meals 🍲 to see how each one might effect my GERD and if it’s going to give me an acid reflux flare up, gas or bloating. Most of my flare ups are a result of hiatial hernia so I took my chances with this high risk meal. I steamed some snow crab legs 🦀, shrimp 🍤and corn 🌽 on the grill with a few tablespoons of butter, lemon 🍋, garlic powder and black pepper, all risky heartburn likely seasonings. I also made some steamed broccoli 🥦 and a baked russet potato 🥔 with a 1/2 tsp. of butter. I drizzled some cilantro lime dressing onto the greens for some extra flavor. So far the issues I’m having with this meal is bloating most likely from the broccoli which is not an unusual food to cause that and scratchy soreness in my throat assuming is from the seasonings and lemon. Hopefully in a few hours I won’t be feeling any further effects 🙏🏻 and I won’t have to completely avoid these foods in the future 😞. Right now I’m going to have a warm cup of ginger tea to soothe my throat.

@zestmylemon Savory Mushroom & Spinach Parmesan Oats with a half boiled egg and avocado. I’ve recently started suffering from GERD and have to make some changes in my diet. One of the foods that are known to help with acid reflux are oats and since I’m not really a fan of sweet breakfasts I made my oats savory. To make these tasty oats combine bring one cup of vegetable broth and 1/2 cup water to a boil. Mix in a 1/2 cup of oats (I used @woodstockfoods Irish oats) and 1/2 cup sliced cremini mushrooms. Reduce heat to simmer and let cook for 3-4 minutes stirring occasionally until liquid is absorbed and mushrooms are tender. Stir in a couple handfuls of organic baby spinach, 2 tablespoons grated Romano Parmesan cheese and 1/2 tsp. garlic powder. Wait for the spinach to wilt then transfer to a bowl. Top with whatever you like. You can also sub the spinach for any other wilting green such as kale. So incredibly good and nourishing! It almost tastes like a mushroom risotto.

@zestmylemon Steak and eggs with garlicky green beans and roasted potatoes for dinner 🥩 need I not say more?  I grilled a thick piece of grass fed New York strip steak medium cooked in my grill pan since its been raining outside and roasted some baby red potatoes 🍠 in my toaster oven. Both were simply seasoned with olive oil, salt and pepper. The green beans were sautéed in olive oil with garlic and the eggs 🍳 were cooked in avocado 🥑 oil. The potatoes came out perfectly crisp and the steak was perfectly cooked. I dipped it in some steak sauce. It was all so good. I hope you have a good night.

@zestmylemon Quinoa, black bean and rotisserie chicken protein bowl with avocado, tomato, red onion, cilantro and a squeeze of lime is what’s for lunch today. I meal prepped the quinoa over the weekend, used canned black beans and store bought organic rotisserie chicken so I was able to put the bowl together in less then 10 minutes. It was a tasty and nourishing meal. I hope your having a great day!
