#fruitsandveggies Instagram Hashtag - What my 3 years old requested for breakfast today💁🏽‍♀️ You guys know I’m a huge fan of smoothies for our breakfasts or at least part of our breakfasts. It’s such an easy way to give her nutritious foods that would be hard for her to consume during the day. I like to use greens, plant-based sources of omega 3 like chia seeds, hemp seeds or flaxseeds and of course when I mix that with fruits she never complains about the kale in it😝 But lately she has been asking to have tortillas and nuts at least once per week for breakfast and I’m totally fine with it. We usually make plates like this one so that at least she gets fruits, some greens (cucumber is the easiest one as she won’t eat kale like this🙃), walnuts (as it’s also a good source of omega 3 and her favorite tortillas. I use the @sietefoods tortillas and they have chia seeds and almond flavors that are super nutritious and Chelsea loves them (not sponsored, I just love them).
What are some of your favorite plant-based breakfast combinations to get a lot of nutrients in? If you have ideas for kids too please share with me! I’m always eager to learn more from you guys!

Ingredients (for 4 servings)
15 oz frozen fry (400 g), thawed
3 tablespoons olive oil, for frying
1 tablespoon butter, for frying
1 tablespoon ginger garlic paste
½ onion, diced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon coriander powder
½ teaspoon salt
½ tablespoon lemon, juiced
½ cup tomato (100 g), chopped
natural yogurt, to garnish
fresh coriander, to garnish

Preparation
Preheat oven to 350°F (180°C).
Spread out the fries on a baking tray and bake for 20 minutes.
While the fries are baking, prepare the masala.
Heat a large skillet over medium heat and add the oil and butter.
Stir in the ginger garlic paste and fry for a couple of minutes.
Add the onion and fry for a few minutes until soft.
Sprinkle in the chili powder, ground cumin, ground coriander, salt, and lemon juice and stir continuously for another minute.
Pour in the chopped tomatoes and fry for several more minutes, until the sauce has thickened.
Add the fries to the pan and stir until evenly coated.
Drizzle some yogurt on top and garnish with fresh coriander.
Enjoy!

500 g crushed tomatoes
2 tbsp tomato puree
1 tbsp maple syrup
1/2 tsp salt
1 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp chili powder
1 tsp oregano
1 tbsp olive oil
For serving:
Gluten-free pasta
coconut yogurt
1. Start with cutting up the onion and carrot.
2. Heat up a frying pan with olive oil and fry the onion until golden. Add the carrots and fry for some extra minutes.
3. Add the lentils, crushed tomatoes, tomato puree, garlic, maple syrup, salt, pepper, cayenne, oregano and chili powder.
4. Let the bolognese simmer for 10 minutes on medium heat.
5. Serve with the glutenfree pasta and optional some coconut yogurt on top.

INGREDIENTS (for 4 servings)
8 oz dried pasta (225 g), cooked
15 oz chickpeas (425 g), 1 can, drained and rinsed
1 cup broccoli floret (150 g), steamed
½ cup carrot (60 g), shredded
½ cup red onion (75 g), sliced
¼ cup fresh parsley (10 g)
¼ cup olive oil (60 mL)
¼ cup red wine vinegar (60 mL)
1 clove garlic, minced
1 teaspoon dried oregano
salt, to taste
pepper, to taste
1 ½ cups cherry tomatoes (300 g)

INSTRUCTIONS
In a large mixing bowl, combine pasta, chickpeas, grape tomatoes, broccoli, carrots, red onion, and parsley.
In a small liquid measuring cup, combine olive oil, red wine vinegar, garlic, oregano, salt, and pepper, and whisk to combine.
Pour dressing over pasta salad and stir until evenly distributed.
Transfer pasta salad into 4 containers and refrigerate for up to 5 days.

Ingredients (for 4 servings)
1 onion, diced
2 cloves garlic, crushed
2 teaspoons coriander powder
1 teaspoon cumin
1 teaspoon turmeric
1 pinch chili flakes
1 pinch salt
1 ginger, 1 1/2 inch (3 cm) piece, chopped
4 tomatoes, chopped
4 tablespoons lentils
4 tablespoons coconut cream
1 ⅓ cups broccoli (200 g), florets
1 can chickpeas, drained and rinsed
½ cup spinach (100 g)
½ lemon, juiced
TO SERVE
low-fat natural yogurt, optional
1 handful fresh coriander, chopped, optional

Preparation
Fry the onion and garlic in a little oil for 3 minutes.
Add all of the spices, the salt, the ginger and cook for a further 2 minutes.
Add the tomatoes, the lentils and coconut cream, cover and simmer on a low heat for 15 minutes until the lentils are tender.
Stir in the broccoli and cook for a further 4 minutes.
Stir in the chickpeas, spinach, and lemon juice and cook a further 3 minutes until the spinach is slightly wilted.
Serve with natural yogurt and some chopped coriander.
Enjoy!

Ingredients (for 4 servings)
1 onion, diced
2 cloves garlic, crushed
2 teaspoons coriander powder
1 teaspoon cumin
1 teaspoon turmeric
1 pinch chili flakes
1 pinch salt
1 ginger, 1 1/2 inch (3 cm) piece, chopped
4 tomatoes, chopped
4 tablespoons lentils
4 tablespoons coconut cream
1 ⅓ cups broccoli (200 g), florets
1 can chickpeas, drained and rinsed
½ cup spinach (100 g)
½ lemon, juiced
TO SERVE
low-fat natural yogurt, optional
1 handful fresh coriander, chopped, optional

Preparation
Fry the onion and garlic in a little oil for 3 minutes.
Add all of the spices, the salt, the ginger and cook for a further 2 minutes.
Add the tomatoes, the lentils and coconut cream, cover and simmer on a low heat for 15 minutes until the lentils are tender.
Stir in the broccoli and cook for a further 4 minutes.
Stir in the chickpeas, spinach, and lemon juice and cook a further 3 minutes until the spinach is slightly wilted.
Serve with natural yogurt and some chopped coriander.
Enjoy!

1 cup broccoli floret (150 g), steamed
½ cup carrot (60 g), shredded
½ cup red onion (75 g), sliced
¼ cup fresh parsley (10 g)
¼ cup olive oil (60 mL)
¼ cup red wine vinegar (60 mL)
1 clove garlic, minced
1 teaspoon dried oregano
salt, to taste
pepper, to taste
1 ½ cups cherry tomatoes (300 g)

INSTRUCTIONS
In a large mixing bowl, combine pasta, chickpeas, grape tomatoes, broccoli, carrots, red onion, and parsley.
In a small liquid measuring cup, combine olive oil, red wine vinegar, garlic, oregano, salt, and pepper, and whisk to combine.
Pour dressing over pasta salad and stir until evenly distributed.
Transfer pasta salad into 4 containers and refrigerate for up to 5 days.

INGREDIENTS:
250 g All-purpose flour
2 dl water
250 g vegan crumbles/minced veggie meat alternative
1 onion (minced)
2 garlic cloves (minced)
2 carrots (minced)
1 can Italian pelati
1 tbsp tomato paste
1 tbs Chili
METHOD
1. Heat the oil, add onion, garlic and carrots and cook until golden.
2. Stir in the “meat” and sauté for 10 minutes. Add in pelati, tomato paste and chili spice, reduce the heat to medium and simmer for 1 hour.
4. For the dough, place flour and water in a food-processor und process until you get a smooth dough.
5. Roll out the dough (2 mm thick). Then cut off circles (2 inch. diameter).
6. Place 1 tbsp of ragout on each circle, form the dumplings, then Steam for 20 minutes and serve with chili sauce.

150 g carrot
1 garlic clove
1 yellow onion (70 g)
500 g crushed tomatoes
2 tbsp tomato puree
1 tbsp maple syrup
1/2 tsp salt
1 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp chili powder
1 tsp oregano
1 tbsp olive oil
For serving:
Gluten-free pasta
coconut yogurt
1. Start with cutting up the onion and carrot.
2. Heat up a frying pan with olive oil and fry the onion until golden. Add the carrots and fry for some extra minutes.
3. Add the lentils, crushed tomatoes, tomato puree, garlic, maple syrup, salt, pepper, cayenne, oregano and chili powder.
4. Let the bolognese simmer for 10 minutes on medium heat.
5. Serve with the glutenfree pasta and optional some coconut yogurt on top.
