making stir fry is seriously the best when you want to use up all the vegetables that are sitting in your fridge or about to go bad 🙊 it took me 15 minutes to whip up this dinner (I used the leftover rotisserie chicken from whole foods) and here is what I did: 
heat up a pan and coat it with olive oil. add 3 cloves of garlic and sauté for a few minutes. then add the veggies you have in hand. i used zucchini, mini bell peppers, broccoli and garlic. first, i sautéed the zucchini, then added bell peppers, cooked for about 4 minutes and finally added a the broccoli. drizzle veggies with toasted sesame oil. prep the pad thai noodles (follow the instructions on the package). they generally takes 5 minutes to boil. add the noodles to the pan with veggies, drizzle with more sesame oil, add the rotisserie chicken, sprinkle with tons of sesame seeds and enjoy!!
I also added avocado and feta cheese to my bowl and it was 🔥🔥🔥 #healthymoodsf #easydinner

prepped dinner in advance so i don’t have to worry about it later. 
sear wild salmon fillet in toasted sesame oil (my salmon is from @sizzlefishfit, code ‘healthymood10’ for discount). season with black pepper, salt, garlic powder . sprinkle with chipotle powder + smoked paprika after it’s done. don’t be like me and set a timer to cook the salmon for 3 minutes on each side🤣
I also made cheesy cauliflower gnocchi (see my highlights for tutorial) drizzled with @sietefoods cashew nacho queso😋
paired with some pickles and arugula, tomatoes, pepitas + EVOO salad😍 i’m off to the gym! haven’t worked out since tuesday and i’m so ready to sweat it out 🙊have a great evening 😘 #healthymoodsf #salmondinner #glutenfree

two more days until we move to our new place and I haven’t even packed half of my apartment 😭 i’ve been living in this place for 10 years—imagine how much stuff we’ve accumulated during this period of time😂
lunch was insanely delicious!
do it: 
toast up the heirloom quinoa along with pine nuts in a dry pan, add water, olive oil, salt, pepper and garlic powder. cover with water and cook according to the instructions on the package. squeeze in some lemon when done.
I marinaded the shrimp in olive oil,  lemon, garlic powder, chipotle powder, salt and pepper (eyeballed all the spices) and let it sit for 20 min. 
grilled in a skillet coated with extra virgin olive oil until ready. it took me about 6 minutes.
paired with arugula, walnut & cucumber salad massaged with extra virgin olive oil and sprinkled with some sesame seeds. HAPPY MONDAY!❤️ #healthymoodsf #glutenfree

spread 2 warmed up @sietefoods almond flour tortillas (any tortillas would work) with a layer of creamy or crunchy peanut butter, then sprinkle with hemp seeds. roll in one banana (each) and cut wrap in half. enjoy! HAPPY MONDAY!

as a huge fan of ricotta pancakes, i’m pretty excited to say that i nailed this recipe 💃🏻 the fluff factor is 😍💯 i dipped my pancakes in @siggisdairy lemon yogurt ( it’s lower in sugar than other leading yogurt brands and it’s so delicious!) and oh my gosh—this combo is mind blowing! do it and let me know what you think 😘❤️
lemon-ricotta pancakes:
8 oz (1 cup) ricotta cheese
2 tsp coconut sugar (upgrade to 4 tsp if you like them to be sweeter)
1 tsp lemon juice
lemon zest from 1 lemon
1/2 tsp vanilla extract
1 egg
4 tbsp almond flour 
2 tbsp brown rice flour
directions: combine all ingredients.
heat a skillet over medium heat and add coconut oil. form cakes into balls with lightly floured hands, and put them into the skillet, press and lower the heat. cook for about 3-4 minutes on each side uncovered. once ready, cover with the lid and let it cook for another 1-2 minutes. enjoy!

made this yesterday and OMG😍 the texture of this cake is AMAZING. it’s so soft and tasty— i seriously can’t stop eating it!😭 add this recipe to your weekend baking plans😘
ingredients💁🏻‍♀️
batter:
1 1/2 C oat flour
2/3 C coconut sugar
1/2 C cashew milk (any nut milk will work) 
1 egg, beaten
1/4 c butter
3 tsp baking powder
1/2 tsp salt

filling: (optional)
2 tbsp butter, melted
1/2 C coconut sugar
2 tsp oat flour
mix together ingredients for filling and set aside. mix together butter and sugar, then beat in egg and cashew milk. add dry ingredients and mix well. 
spread half the batter into a greased 8x8 pan and sprinkle half the filling over batter. repeat layers. bake at 375F for 25-30 minutes. while still warm i drizzled it with @artisanaorganics coconut butter and I also sprinkled it with @moodbeli tocos (you can use powder sugar). enjoy! #healthymoodsf #coffeecake

two of my favorite ways to eat oats is overnight oats and steel cut oats. how do you like to cook your oats?
make it:
soak 1/4 c steel-cut oats the night before in 1/2c HOT water. In the morning add in another cup of water, pink salt, 1/2 tsp vanilla extract and cook for 15 minutes, stirring occasionally. then add 3 tbsp @siggisdairy yogurt for the protein boost, 1/2 mashed banana, (slice thickly so it makes it look like there’s tons of bananas), 1 tsp chia seeds, 1 tsp maple syrup and stir occasionally until ready. top with another 1/2 banana, strawberries, @siggisdairy yogurt, hemp seeds, peanut butter and a drizzle of honey. enjoy 😘 #healthymoodsf #dailysiggis #sponsored #oats #steelcutoats

I don’t always do, but when I make food in big batches, i try to freeze and it always saves the day💯

recipe:
2 eggs
1 banana
1 c almond flour 
1 tbsp coconut oil
1/3 c frozen blueberries (fresh will work too)
1/4 tsp pink salt 
mash a banana using a fork, in a separate bowl whisk eggs and combine with mashed banana. add coconut oil, salt and almond flour. mix well. add blueberries and gently mix in the batter. 
cook the pancakes in a pan coated with coconut/avocado oil on low with the lid on for 3 minutes on each side. enjoy 😘 #healthymoodsf #paleo #pancakes #glutenfree

it’s like having a coconut party in your mouth so you have to try it🤤 
topped my pancakes with yogurt, blueberries, peanut butter and a coconut peanut butter @perfectbar (it’s a must-have topping). I doubled the recipe, but here’s what you need for 1 serving (3-4cakes):
1 banana
1 egg 
3 tbsp of coconut flour
1/2 tsp of baking powder
1/2 tsp cinnamon✨
mash the banana, add whisked egg, baking powder, coconut flour and cinnamon. mix well and form pancakes into 4-5 inch cakes using your hands and cook within a pan coated with coconut oil at low heat with lid for 3-4 minutes on each side. enjoy!

serving this up with chicken for dinner and I can’t waittttt 👏🏻👏🏻👏🏻
do it:
bring water to boil (use a pot that will fit the cauliflower) and boil the head of the cauliflower for 5 minutes.
remove from the pot, pat dry and coat the cauliflower in EVOO and rub it with fine sea salt, 1/2 tsp garlic powder, dash of black pepper, 1/3 tsp chipotle powder and 1/4 tsp dried basil.
bake at 380F for 20-25 minutes or until golden brown. sprinkle with sesame seeds, “everything but the bagel seasoning” & drizzle with tahini dressing and enjoy!
for tahini dressing mix well the following ingredients:
¼ cup extra-virgin olive oil.
¼ cup tahini
2 tablespoons lemon juice
½ teaspoon fine sea salt

I added some @littlesecretsco peanut butter filled chocolate. just imagine melted chocolate covered peanut butter on top of your cookies?! oh yum!! do it:
ingredients: 4 bananas, 1 c oats (gf), 4 tbsp cashew butter, 1 1/2 tsp tsp cinnamon, handful of @littlesecretsco chocolate pieces (or chocolate chips).
preheat oven to 400F. Mash the bananas, add cashew butter and cinnamon and mix well. Mix in the oats to the batter and stir well. Roll the cookies into balls with (I used a tablespoon to scoop) and place on a baking sheet sprayed with coconut oil. Stir in @littlesecretsco chocolate pieces. Bake for 18-20 minutes.

3 tbsp paleo pancake mix (I used @bobsredmill)
1 egg
1 tsp baking powder
1/2 tsp cinnamon 
1 tbsp almond milk
1 tbsp coconut oil

1/2 mashed banana

do it: 
warm up @sietefoods almond flour tortillas and spread with @wholefoods peanut butter. place very thinly sliced bananas on top of peanut butter half of the tortilla, (if the bananas are too thick the quesadilla will not be gooey and will not hold together), add some chocolate chips on top of banana slices. 
fold over the filled side and cook the quesadilla in a skillet over medium-low heat until golden brown (i cooked for about 3-4 minutes on each side). cut the quesadilla and enjoy with some fresh berries on the side!👅 happy wednesday friends!🤗 #healthymoodsf #glutenfree #dairyfree

I tried plantain patties at the restaurant in Marin last weekend and wanted to recreate them at home so badly🙃they are great paired with dinner or breakfast🙌🏻 I used two plantains for the recipe and it made 6 patties, but you can double the recipe for more. 
do it!
ingredients:
2 ripe plantains
salt
5-6 garlic cloves
olive oil for cooking
directions: in a bowl, mash the plantains with a fork. add salt. 
preheat your pan at medium heat and cook 5 cloves of garlic in extra virgin olive oil (for flavor) until browned. remove the garlic from the pan. using a tablespoon transfer the mashed plantain into the same pan with garlic infused oil and cook at medium-low heat for 4 minutes on each side. remove patties from the pan, brush with minced garlic and some olive oil & transfer them to the oven and bake for another 10 minutes. paired with fried eggs, avocado and feta cheese. off to barry’s to get my 🍑 kicked 🙊HAPPY MONDAY!! #healthymoodsf #glutenfree #dairyfree

I love polenta because it’s SUPER easy to cook, it’s gluten-free,and  it’s a complex carbohydrate that contains both fiber and protein!
to make:
bring water to a boil in a medium sauce pan (for firm polenta use 4 cups water; for soft polenta use 5 cups water).
pour polenta grits slowly into water, stirring with a wooden spoon. continue stirring until mixture thickens, 2-3 minutes. reduce the heat to low. add 3 tbsp butter, 1 tsp salt and cook for at least 
25 -30 minutes, stirring every 5 minutes or so. If polenta becomes quite thick, thin it with 1/2 cup water, stir well and continue cooking. grains should be swollen and taste cooked, not raw. lather polenta with more butter/ghee👌🏻 I love adding feta + dubliner cheese to it so it melts and tastes 🔥🔥🔥HAPPY SUNDAY!!! #healthymoodsf #polenta #glutenfree

as a huge fan of ricotta pancakes, i’m pretty excited to say that i nailed this recipe 💃🏻 the fluff factor is 😍💯 i dipped my pancakes in @siggisdairy lemon yogurt ( it’s lower in sugar than other leading yogurt brands and it’s so delicious!) and oh my gosh—this combo is mind blowing! do it and let me know what you think 😘❤️
lemon-ricotta pancakes:
8 oz (1 cup) ricotta cheese
2 tsp coconut sugar (upgrade to 4 tsp if you like them to be sweeter)
1 tsp lemon juice
lemon zest from 1 lemon
1/2 tsp vanilla extract
1 egg
4 tbsp almond flour 
2 tbsp brown rice flour
directions: combine all ingredients.
heat a skillet over medium heat and add coconut oil. form cakes into balls with lightly floured hands, and put them into the skillet, press and lower the heat. cook for about 3-4 minutes on each side uncovered. once ready, cover with the lid and let it cook  for another 1-2 minutes. enjoy! #healthymoodsf #dailysiggis #sponsored #glutenfree #ricottapancakes

combine all the ingredients and toss the wings in the mixture. 
bake at 425 for 20 minutes flipping hallways through.
