If you're looking for the perfect side dish to pair with your favourite proteins, look no further! These super flavourful garlic-lemon-oregano potatoes take the prize! They're made with only 2 tablespoons of olive oil and a few simple ingredients. Go ahead, get started!

INGREDIENTS:
▪️2 tablespoons of olive oil
▪️2 tablespoons of minced garlic
▪️1/2 teaspoon of salt
▪️1 teaspoon of dried oregano
▪️3 tablespoons of lemon juice
▪️Approximately 1.5lbs of mini/round yellow fleshed potatoes, skin on
▪️1 cup of chicken broth
▪️Crumbled feta cheese
.
DIRECTIONS:
🔹️Pre-heat oven to 400F.
🔹️In a small bowl combine olive oil, garlic, salt, oregano and lemon juice. Mix together well and set aside.
🔹️Cut mini/round potatoes in half (skin on, no need to peel) and place into a mixing bowl.
🔹️Add the garlicky mixture that you made earlier. Mix well to ensure that all potatoes are coated in the mixture. 🔹️Transfer potatoes to a deep baking dish (scrape out and add all garlic mixture stuck to the sides of bowl). Cover with foil and bake for 25 minutes.
🔹️Uncover potatoes and add chicken broth. Bake again, this time uncovered, for 20-23 minutes or until potatoes are fork tender.
🔹️Remove potatoes from the oven. Toss gently in the mixture to coat them all with the flavour of the broth. Top with crumbled feta cheese and serve! 💯

Ingredients
- x1 Chicken breast
- Pickle juice
- x1 Egg
- ½C Panko breadcrumbs
- 1TB Powdered sugar
- Salt & Pepper
- ½CFlour
- ¼CCorn Starch

Instructions

Chicken pickle brine: Cut chicken breast into one inch pieces and cover in pickle juice and let sit for at least 20 minutes (longer the better)

Dredge: combine the flour, cornstarch, panko, and powdered sugar, pinch of salt and pepper into a bowl and mix

Egg wash: x1 egg salt & pepper, beat it

Coating the chicken: Take chicken out pickle juice and pat dry with paper towels, and dip in egg wash then cover in dredge and place on a separate dish, rinse and repeat for all the nuggets
Frying: bring canola oil or any frying oil up to heat (375) or check with chopstick (when you place chopstick into oil and bubbles form oil is ready) fry nuggets for 3-4 minutes each side or until golden brown, do this in batches to prevent overcrowding, and take out and place on paper towel lined plate

Serve with fries & EAT

Looking at some banana breads that we buy in cafes they can be pretty energy (calorie) dense due to having added sugar and butter etc and often work out being pretty similar to having a slice of cake. This is totally fine but often we think we’re being “good” or “healthy” by ordering banana bread but that it’s always the case.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here is my twist on banana bread (no added sugar, olive oil instead of butter and wholemeal flour). ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS:
⅓ cup extra-virgin olive oil
2 eggs
1 cup mashed ripe bananas (about 2 large bananas)
¼ cup milk of choice or water
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, or more if you’re a cinnamon lover
1 ¾ cups whole wheat flour
Optional mix ins - chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD:
1. Preheat oven to 165 degrees celsius.
2. In a bowl beat oil, eggs, milk and mashed banana together.
3. Adding baking soda, vanilla, salt and cinnamon and mix together.
4. Add mix ins
5. Pour batter into a greased loaf pan and bake for 55 to 60 mins.

Morbidi,colorati e semplici da preparare, gli gnocchi di zucca è un piatto della tradizione contadina preparato con gli ingredienti dell'orto.
Io li ho voluti condire con un formaggio tipico della Lessinia, le montagne del veronese, il Monte Veronese dal gusto saporito.
Per legare meglio l'impasto ho aggiunto una patata lessata.
Durante le serate dello Speziale è sempre aperto un piccolo mercatino con i prodotti dell'orto di Malga Albarè sul Monte Baldo e qui ho avuto l'occasione di prendere delle patate di montagna che hanno la caratteristica di essere molto farinose. Vi assicuro che è tutto un altro mondo rispetto alle patate del supermercato.
Buonissime anche lessate con olio e prezzemolo senti proprio la consistenza particolare, sanno di terra di montagna.
Purtroppo noi di città non conosciamo il sapore vero dei prodotti della terra sommersi come siamo da confezioni di plastica.. GNOCCHI DI ZUCCA
BURRO E MONTE VERONESE
INGREDIENTI:
300 Farina 00
1 Uovo
600g Zucca
1 patata lessata
7 gr Sale
Burro
Monte veronese da grattugiare
PREPARAZIONE:
1. Preparate la zucca lavarla, togliete i semi e cuocetela in forno a 180° per 20-25 minuti con olio sale pepe e un ramo di rosmarino. Una volta cotta schiacciatela con la forchetta. Schiacciate anche la patata che deve essere ancora calda.
2. Mettete la zucca e la patata su un piano di lavoro ben infarinato, aggiungete il sale la farina e impastate il tutto fino ad ottenere un composto compatto ma allo stesso tempo soffice
3. Aggiungere l'uovo e continuare ad impastare fino ad ottenere un impasto senza grumi e compatto
4. Quindi lavorare l'impasto in filoni dello spessore di 2-3 centimetri e iniziare a tagliare i vostri gnocchi riponendoli su una superficie o un vassoio infarinato.
Per ricreare le caratteristiche rigature degli gnocchi fare scivolare ogni gnocco sulla forchetta schiacciando delicatamente oppure usare il riga gnocchi.
3 Lasciate riposare i vostri gnocchi per 15 minuti, infine fateli cuocere in abbondante acqua salata e scolateli quando saliranno a galla.
Servire con abbondante burro fuso e formaggio Monte veronese grattugiato.

A real trifle can contain plenty of sugar and calories and whilst government guidelines are to have no more than 30g of free/added sugar per day (7tsp) many food products especially fruit yoghurts contain added sugar. Look out for food labels- carbohydrates of which sugars should be 5g per 100g or less of sugars. Excessive amounts can be harmful but everything is to be enjoyed in moderation.

I added orange to the salad for some sweetness which goes so well with the carrot! It’s a dish that works well in all seasons as it’s light and fresh but satisfying. It would work with any veggies so you can mix it up depending on what you fancy 😋
(This recipe serves 2/3 people, left over quinoa salad will keep in the fridge up to 3 days)

𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤
(𝔽𝕠𝕣 𝕥𝕙𝕖 𝕔𝕒𝕣𝕣𝕠𝕥𝕤)
-4/6 long rainbow carrots (I used sweet kingdom carrots) cut in half
-drizzle of olive oil
-1 Tsp cumin powder
-salt and pepper
(𝔽𝕠𝕣 𝕥𝕙𝕖 𝕢𝕦𝕚𝕟𝕠𝕒)
-200g cooked quinoa
-2 Tbsp finely chopped fresh mint
-2 Tbsp finely chopped fresh parsley
-2 Tbsp finely chopped fresh coriander
-1 orange (zest and pith removed, cut into small pieces)
-1 generous handful of rocket
-2 Tbsp pumpkin seeds
-1/2 Tbsp cumin seeds
-2 Tbsp olive oil
-1 Tbsp balsamic vinegar
-1 crushed garlic clove
(𝔽𝕠𝕣 𝕥𝕙𝕖 𝕥𝕒𝕙𝕚𝕟𝕚 𝕕𝕣𝕖𝕤𝕤𝕚𝕟𝕘)
-3 Tbsp light tahini
-2 Tsp soya sauce (or tamari)
-2 Tsp maple syrup/agave
-3 Tbsp water

𝕄𝕖𝕥𝕙𝕠𝕕

𝔽𝕠𝕣 𝕥𝕙𝕖 𝕔𝕒𝕣𝕣𝕠𝕥𝕤
Preheat oven to 200C.
Place halved carrots onto a lined baking tray, drizzle with oil, season with salt pepper, cumin and toss to coat. Bake in the middle of the oven for approx 25-30 minutes. (Try to avoid burning the tips before the carrots are tender)

𝔽𝕠𝕣 𝕥𝕙𝕖 𝕢𝕦𝕚𝕟𝕠𝕒
Add all ingredients to a mixing bowl and mix well to combine. In a separate bowl mix together olive oil, balsamic and garlic, then drizzle onto salad and mix again to coat all the quinoa.

𝔽𝕠𝕣 𝕥𝕙𝕖 𝕥𝕒𝕙𝕚𝕟𝕚 𝕕𝕣𝕖𝕤𝕤𝕚𝕟𝕘
Mix all ingredients together in a small bowl or jug and stir together well. If the dressing is too thick add a little more water at a time until you reach a thick but runny consistency.

When carrots are tender and cooked through they are ready to place on top of your quinoa salad.
Drizzle with tahini dressing and pomegranate pearls! 😍 DELICIOUS!

First of all, it's 25% lighter than regular cast iron pans - I admit my small wrists usually have trouble picking them up 🙈 Secondly, it's natural non stick finish makes it SO easy to clean - mums/all Humans rejoice!
And thirdly, the V shape cut out handle allows for airflow to cool the handle - quickly! On masterchef it was a regular occurrence to go to grab these handles without tea towels and the burn was real 🔥😱 soo.. THIS IS GENIUS!

Ingredients:
3 large ripe Hass avocados, halved, pitted, and scooped out
1 teaspoon fresh lime juice
2 tablespoons minced cilantro (coriander/dill)
1 medium jalapeno, seeded and minced
1/2 teaspoon crushed red chili flakes
1/4 teaspoon Kosher or sea salt
Fresh cracked black pepper, to taste
1 medium tomato, seeded and diced

Directions:
In a bowl, mash the avocado with a fork until it is nearly at your desired consistency. Stir in the lime juice, cilantro, jalapeno, chili flakes, salt, and pepper. Gently fold in the tomatoes. Serve immediately or else press a piece of plastic wrap flush into the top of the guacamole, refrigerate and serve later.

Il dolce di panbrioche è stato apprezzato. Ne ho in forno un altro.
Posto un piccolo video e scrivo la ricetta .
Ingredienti:
170 gr di latte senza lattosio
Una bustina di lievito secco @paneangeliofficial
400 gr di farina
100 gr di farina di mandorle
40 gr di zucchero
2 uova
50 gr di burro senza lattosio
Procedimento:
Scaldare il latte con il lievito ( deve essere tiepido).
Aggiungere la farina,
Ad uno ad uno tutti gli altri ingredienti.
Formare una palla liscia.
Mettere in una ciotola e coprire col la pellicola trasparente e fare lievitare per due ore.
Dividere l’impasto lievitato in quattro parti.
Su un foglio di carta da forno, stendere il panetto , spalmare con la crema di nocciole senza lattosio e continuare fino al quarto disco.
Posare al centro un coppapasta e tagliare il disco in 4 parti, poi in 8, infine in 16.
Prendere due spicchi per volta , girare su se stessi per due volte e chiudere.
Fare lievitare un’ora.
Spennellare con del latte.
Cuocere in forno statico a 180 gradi per 25/30 minuti.

Pandan Butter Cookies by Mama Ding's Kitchen
Prep time: 15mins. Chill time: 30mins. Cook time: 30mins
Yields: About 40 cookies
Ingredients:
227g unsalted butter, softened
140g castor sugar
1/4 tsp salt
2 large egg yolks, room temperature
1.5 tsp vanilla extract
280g plain flour
4 tsp pandan extract
For pandan extract~
30 - 40 pandan leaves, cut into smaller pieces
120ml water
METHOD:
Prepare the pandan extract the day before. Blend the pandan leaves with water until fine. Sieve and keep the juice in a glass. Refrigerate overnight. The next day, the pandan juice would have separated into 2 layers. Pour out the upper clear liquid and keep for other purposes like cooking rice, jelly or kuih. Use the thicker darker green liquid at the bottom of the glass; this is the pandan extract we are using for this recipe.
Preheat oven to 180C.
In a bowl of a stand mixer attached with paddle attachment, cream butter, sugar and salt together at high speed until pale and creamy. Scrape down the sides one or two times.
Add in egg yolks and vanilla extract.
Lower the speed to low and add in flour. Mix until combined. Add in the pandan extract and mix well.
Transfer the cookie mixture into a piping bag with your favorite nozzle. Pipe your desired shapes (I used a flat nozzle) onto a baking pan lined with parchment paper. Refrigerate for 30mins before baking.
Bake at 180C for 12 - 15 mins.
Let cool on the baking pan for 5mins before transferring to a wire rack to cool completely.
Store in an airtight container. Should keep for up to 3 weeks.
*Note: For Danish Butter Cookies, just replace pandan extract with milk. Use a large star nozzle on a piping bag and pipe into rosette shapes or your favorite shape.
Adjust baking time according to your oven. Cookies are done when the edges are slightly brown.

1 x Woolworths Spiced Apple Ham Glaze
2 onions, skin removed, quartered
8 red delicious apples, larger apples halved
rosemary sprigs, to serve
Method
1. To prepare the ham, preheat the oven to 160°c. Grease a large, shallow roasting pan. Line with greased foil, then baking paper. Sit the ham on a wire rack over roasting tray. Use a small, sharp knife to cut around ham shank.
2. Add 2 cups water to tray and bake for 20 minutes to help separate the skin from the meat. Remove from oven, then, when cool enough to handle, carefully run knife under the skin, around the edge of the ham. Gently lift off the skin in one piece by running your fingers between the rind and the fat. Score ham with horizontal lines spaced 1cm apart. Add apple and onion to pan. Brush ham with one third of the glaze.
3. Increase oven to 200°c and bake ham, brushing with remaining glaze and pan juices every 30 minutes, for a further 1 hour 30 minutes or until ham is golden and sticky and apples and onions are softened and cooked through. If ham should begin to burn or colour too much, cover loosely with foil. Place ham, roasted apples and onions on a platter and serve scattered with rosemary sprigs.

This recipe is smoky and juicy and everything you want in a piece of chicken that you didn’t even know you could make yourself. To lock in all of the flavor, you’ll blend up the simple marinade and let the chicken soak in it in the fridge for about 16 hours. .⁣
If you love chicken chipotle burrito bowls, you’ll love this recipe!⁣
Copycat Chipotle Chicken⁣
Makes ~4-6 servings⁣
⁣
Ingredients⁣
⁣
1/2 large red onion, chopped roughly⁣
5 cloves garlic, chopped roughly⁣
2 chipotle peppers in adobo⁣
2 Tbsp. adobo sauce from the chipotle pepper can⁣
1 Tbsp. extra virgin olive oil⁣
Juice from 1 lime (~2-3 Tbsp. lime juice)⁣
2 Tbsp. oregano⁣
2.5 tsp. cumin⁣
1 Tbsp. salt⁣
1 cup water⁣
2 lb. chicken breasts, cut in half to make thinner⁣
1 Tbsp. Cooking oil of choice (do not add to marinade)⁣
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬⁣
⁣
Add all ingredients, besides chicken and cooking oil, to a blender. Blend until smooth.⁣
Add chicken and the blended marinade into a container. Combine until all chicken is coated and soaking in the marinade. Cover in an air-tight container for ~16 hours in the refrigerator.⁣
After the chicken has marinated, heat 1/2 Tbsp. cooking oil in a large pan. Add half of the chicken breasts and cook for about 5-6 minutes per side. Remove chicken from skillet after it reaches an internal temperature of 165 F and the meat is no longer pink. Set cooked chicken aside to rest. Add remaining 1/2 Tbsp. oil to the pan, and repeat the process with the uncooked chicken.⁣
When all the chicken is cooked and has rested for about 10 minutes, chop into bite-sized pieces (like at Chipotle!). I like to toss some of the diced chicken into a pan to heat up each time before I eat it, but microwaves work just fine too. ⁣

Paleo Skillet Steak Bites

1 pound flat iron steak, cubed
1 large sweet potato, cubed
2 red bell peppers, seeded and chopped
1 small yellow onion, chopped
3-5 baby Bella mushrooms, chopped
1 cup broccoli, washed and cut into florets
3-4 garlic cloves, minced
2 tsp fresh ginger, grated
2 green onions, thinly sliced
2 Tbsp cilantro, roughly chopped
3 Tbsp coconut aminos
2 tsp garlic powder
Salt & pepper to taste
2 Tbsp Extra virgin olive oil

Instructions:
Preheat an oven to 350 degrees.
Heat a large oven safe skillet with the olive oil over high heat.
Season the steak with salt, pepper, and garlic powder and place in the hot skillet. Cook until the steak bites are brown all over.
Add the sweet potato, onion, mushrooms, pepper, broccoli, garlic, and ginger. Stir to combine.
Add the coconut aminos and stir to coat.
Place the entire skillet into the oven to bake for 30 minutes until the sweet potatoes are tender and the veggies are browned.
Remove the skillet from the oven and top with the green onions and cilantro.
Serve immediately!

#recipeshare Instagram Hashtag - I’m not a huge dessert person. I’m generally happy with a chunk of dark chocolate and a strong cup of coffee...which is why I’m so on board with affogato’s. I whipped these up the other day and I was in heaven...the coffee, the homemade dark chocolate hazelnut syrup, the vanilla bean ice cream.... there’s really no better combination. It’s so easy to make your own version at home and wow your guests...⁣

Hazelnut Fudge Affogato:⁣
For the chocolate sauce:⁣
Combine 1/2c coconut sugar, 1/4c cacao powder, 1/4c chocolate hazelnut spread, 1/2c water and 1tsp vanilla in a saucepan over medium high heat stirring until combined. Bring to a boil and whisk in 1Tbsp of arrowroot powder. Reduce heat and simmer 3-4 minutes. Remove from heat and allow to cool a bit. This can be made ahead of time. ⁣
⁣
For the coffee (you want it strong so...)⁣
Brew coffee using 6Tbsp quality coffee grounds (I used @purity_coffee ) and 2c filtered water. ⁣
⁣
While the coffee brews place about 1c vanilla bean ice cream ( I used @so_delicious coconut milk based) in 4 dessert dishes. Pour about 2oz of the coffee over each dish of ice cream. Top with a generous drizzle of the chocolate sauce. Finish with chopped hazelnuts. ⁣

Note:⁣
These are so customizable. Dress them up for the holidays using chopped peppermint sticks in place of hazelnuts. ⁣
Keep it #vegan by using a vegan ice cream and hazelnut spread OR swap out the hazelnut spread for a nut butter such as cashew or peanut butter. ⁣

I’ve been making it a ton this holiday season and may continue year around, because after all it only takes minutes to make, is easily freezable, and adds so much without messing up my diet. ⠀

Sugar Free/ Keto Homemade Cranberry Sauce⠀
⠀
Ingredients⠀
12 ounce bag of fresh cranberries⠀
2/3 cup water⠀
zest of 1/2 an orange⠀
1 teaspoon fresh lemon juice⠀
3/4 cup swerve confectioners (or powdered erythritol or powdered monk fruit) ⠀
⠀
Instructions⠀
Add the water, orange zest and swerve to a saucepan and bring to a simmer. Add in the cranberries and lemon juice, then simmer on low for 12-15 minutes or until the cranberries burst open. Be sure to stir occasionally.  If you want your sauce a little more chunky, cook closer to 12 minutes, if you want a smoother sauce, cook closer to 15 minutes. The longer it cooks, the more the cranberries will break down. Remove from the stovetop, transfer the sauce to a bowl, cover and chill in the fridge until you are ready to serve.⠀

𝘕𝘖 𝘉𝘈𝘒𝘌 𝘊𝘏𝘙𝘐𝘚𝘛𝘔𝘈𝘚 𝘚𝘜𝘎𝘈𝘙 𝘊𝘖𝘖𝘒𝘐𝘌 𝘉𝘐𝘛𝘌𝘚🎄☃️ We have been so busy the last week that we haven’t done much decorating yet 😳 It’s top on my to-do list for the weekend though! ✨⁣
*⁣
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:⁣
1 2/3 cup almond flour⁣
3/4 cup cashew butter ⁣
1/3 cup honey⁣
1 tsp vanilla extract
Dash of salt ⁣
⁣
𝐅𝐫𝐨𝐬𝐭𝐢𝐧𝐠:⁣
1/3 cup coconut butter, melted⁣
Red/green sprinkles ⁣
⁣
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:⁣
1. Mix together all ingredients (besides frosting) until smooth⁣
2. Line an 8x8 pan with parchment paper. Evenly spread dough across bottom. Freeze for 20-30⁣
minutes⁣
3. Pour coconut butter evenly over top. Add sprinkles. Refrigerate until hardens. Cut into 16+ pieces & enjoy ✨⁣
*can keep in the refrigerator or freezer.
