1 tablespoon olive oil

​Recipe: Pasta:⠀
16 ounces rigatoni⠀
1 head broccoli, chopped⠀
1–2 cups baby bella mushrooms⠀
⠀
Sauce:⠀
2 1/4 cups unsweetened plain almond milk⠀
Juice from 1 lemon (or more to taste)⠀
12 large garlic cloves⠀
3 tbsp brown rice flour⠀
1–1.5 tsp sea salt ⠀
1 tbsp olive oil⠀
Black pepper to taste⠀
Optional: 1/2 tsp lemon zest⠀
⠀
instructions⠀
Bring a large pot of water to boil and cook pasta according to package instructions. ⠀
Gently wash mushrooms to remove any dirt. ⠀
Slice each mushroom into about 4 pieces. ⠀
Add to a pan with the broccoli, add about 1/2 inch of water, cover, and let steam for about 5-7 minutes.⠀
Prepare the sauce by mincing the garlic. ⠀
Add the garlic to a large pot with the olive oil and cook until the garlic starts to brown. ⠀
Stir in the flour and whisk to get rid of any clumps. ⠀
Slowly stir in the almond milk and continue to whisk. ⠀
Add the lemon juice and lemon zest if using. ⠀
Reduce heat to low and let simmer until the sauce has thickened. If the sauce doesn’t thicken to your desired consistency, whisk in an additional tbsp of flour. ⠀
Add the salt and pepper and stir. ⠀
For an ultra creamy sauce, transfer to a blender or use an immersion blender and process until completely smooth. ⠀
Add the mushrooms, broccoli, and sauce to the cooked pasta. ⠀
Top with additional salt, pepper, or red pepper flakes if desired and enjoy!⠀

Recipe⠀
• 400g can chickpeas, drained & rinsed • 1 tsp curry powder ⠀
_⠀
1️⃣ preheat oven to 200C/180C fan/400F/gas 6, line a baking tray with non stick baking parchment.⠀
2️⃣ After draining and rinsing the chickpeas, pat them dry with a clean tea towel, then add them to a bowl.⠀
3️⃣ sprinkle in the curry powder and stir until the curry powder has coated all of the chickpeas.⠀
4️⃣ Bake them in the oven for 15 - 20 minutes , turning them over halfway through cooking time! .⠀

INGREDIENTS:⠀
1/2 lb. pasta of your choice⠀
1 T oil⠀
1/4 red onion finely chopped⠀
2-3 cloves minced garlic⠀
1 pint cherry or grape tomatoes sliced⠀
3/4 cup white wine or veggie broth⠀
1 T dried basil⠀
3/4 tsp kosher salt⠀
1/2 tsp pepper⠀
1/2 medium bunch kale removed from stem and chopped in 1 inch pieces and gently massaged for a few seconds with touch of oil⠀
1 cup marinated artichokes, drained⠀
3 T capers (optional)⠀
Juice of 1/2 lemon⠀
Garnish: Red chili flakes (optional)⠀
⠀
DIRECTIONS:⠀
1. Put pot of water on to boil for pasta. ⠀
2. Meanwhile, add oil to large pan over medium heat and once hot, add onion, stir frequently adding bit of water if pan is too dry along the way. ⠀
3. Cook 5 min, add garlic and tomatoes and cook another 3 min, careful not to burn garlic. ⠀
4. Add wine, basil, salt and pepper, stir, and raise heat if needed, to get bubbly. Then lower heat a bit to cook at a low simmer (just bubbly) for several min until liquid is reduced by half. ⠀
5. Add kale and artichokes, stir, put cover on pan, and cook another 1 min. Uncover and stir. Kale should be bright green and slightly.⠀
6. Add sauce to cooked pasta and gently stir, adding capers and lemon juice. ⠀
7. Taste and add more salt/pepper if desired.⠀
8. Serve and top with optional red chili flakes for some spicy heat! ​_⠀

#wholefoods Instagram Hashtag - Nothing like summer grilling nights🔥This meal was so easy & flavorful that I could honestly eat it every day👏🏻Salmon veggie skewers (+ steak for the hubby) + sweet potato fries + coleslaw and an Israeli salad 🌿Full details below 👇🏼
Salmon skewers- remove the skin from a salmon fillet and cut into cubes. Marinate in @annieshomegrown sweet & spicy bbq sauce for at least 30 minutes. Layer on a skewer with veggies of choice (I used peppers and zucchini) and season with salt, pepper and garlic powder. Grill for about 10 minutes flipping every couple of minutes. 
Sweet Potatoes- slice sweet potatoes into thin wedges. Season with salt, garlic powder, pepper and smoked paprika. Toss in olive oil and bake on 375 for about 25-30 minutes, flipping halfway through
Coleslaw- shredded cabbage (I get mine from @traderjoes) mixed with @sirkensingtons avocado oil mayo, lemon juice, salt & pepper
Israeli salad- cucumbers, tomatoes, chickpeas, chopped mint dressed in olive oil, lemon juice, salt & pepper

Paradise in a bowl! 🍜 Unbelievably tasty and yet so good for you. The health benefits of mangoes are many including being high in fibre and antioxidants and having anti-inflammatory properties (as has the turmeric). Mangoes are rich in vitamins C which helps build collagen making your skin more elastic and less wrinkly and vitamin A also good for skin health. Studies show that eating this fruit can help with constipation too - not bad!

To balance the fruit sugar in the mango and banana, I eat this with quinoa, nuts and seeds for plant protein and healthy fats. Perfect combination. ✨

TOP LAYER:
1/2 very ripe banana, frozen
Handful of mangoes, frozen
2 tbsp coconut or soya yogurt (unsweetened)
1/2 tsp turmeric 
Pinch of black pepper (to help absorb the curcumin in the turmeric)

BOTTOM LAYER:
Cooked quinoa, cooled
Splash of oat milk (or any milk)
1 tbsp chia- & flaxseed mix
Small handful mixed nuts, chopped 
Pinch of cinnamon & ground ginger

TOPPING: Your favourite fruit and berries.

I find it much easier to dive into something sweet first thing in the AM, and then my body only craves healthy veggies and protein the rest of the day! Yum! 💕🥞 || heat 6 fl oz coconut milk over the stove, add 1.6 oz rolled oats (I use @traderjoes). Stir until milk is cooked through. I added 2 egg whites for some extra protein, 1 scoop @myproteinus chocolate whey, 1 scoop @vitalproteins collagen peptides, 1 tsp cacao powder. Then topped with 1 tbsp PB, frozen raspberries, @lilys_sweets  keto chocolate chips (sugar free!! 🍭) cacao nibs, and flax! I am stuffed!

Opskrift til 6 æbleroser.
Ingredienser:
1 stort rødt æble 
50 gram brun farin
30 gram vegansk smør
1/2 tsk kanel
1 pakke butterdej på køl
Saften fra en halv citron
Fremgangsmåde:
Bland smør, brun farin og kanel sammen i en skål.
Halvere æblet og skær det i tynde skiver.
Kom dem i en skål sammen med saften fra citronen.
Kom skålen i mikroovnen i 2-3 min.
Hæld overskydende væske fra.
Rul butterdejen ud på et bord med lidt mel.
Skær dejen i 6 aflange strimler.
Smør et tyndt lag af kanelblandingen på hver strimmel.
Læg æbleskive på og rul sammen.
Bag dem i en muffins bageform i 30 min ved 180 grader.
Kom en lag stanniolpapir henover de sidste 10 min, så æblerne ikke bliver brændte på toppen.

100 gram pekannødder
1 æble
1 rødløg
2 fed hvidløg
1 spsk balsamico glaze
1 spsk vegansk smør fra @plantebevaegelsen 
Salt og peber
Fremgangsmåde:
Snit løget fint, pres hvidløgene, skær æblet i små tern og hak nødderne fint.
Smelt smørret på en pande og svits løg, hvidløg, æble og nødder heri i 5 min.
Halvere rosenkålene og placere dem i et ildfastfad og tilsæt salt og peber.
Tilsæt til fadet de smørstegte løg, hvidløg, æble og nødder.
Kom 1 spsk balsamico glaze henover og vend det hele godt rundt.
Bag det i ovnen i 45 min på 200 grader og vend det rundt efter en halv time.
Fyldte Portobello svampe:
6 Portobello svampe
1 rødløg
2 fed hvidløg
100 gram pekannødder
2 skiver brød 
2 spsk riseddike
1 1/2 dl grøntsagsbouillon 
1 stængel bladselleri 
1 gulerod
2 spsk vegansk smør
1 tsk tørret timian
Salt og peber
1 spsk balsamico glaze
2 spsk ahornsirup
Fremgangsmåde:
Snit løget fint og pres hvidløgene.
Skrab indmaden ud af svampene.
Kom nødder og brød i en food processor og blend i 30 sekunder så det ligner rasp.
Skræl guleroden og skær den i små tern.
Skær bladselleri i små tern.
Smelt smørret på en pande og svit løg, hvidløg, gulerod, bladselleri, indmaden fra svampene og krydderier heri i 2-3 min.
Tilsæt riseddike, ahornsirup og bouillon og lad det koge ind i 3-4 min.
Tilsæt de fint blendede nødder/brød og balsamico glaze til panden og rør det hele godt rundt.
Fyld dine svampe og placere dem i et smurt ildfastfad.
Bag dem i ovnen i 25 min på 200 grader.
Brunede kartofler:
2 glas perle kartofler
Sukker
1 1/2 spsk vegansk smør eller margarine
Fremgangsmåde:
Hæld vandet fra kartofler.
Varm en pande op og dæk hele overfladen med sukker.
Lad sukkeret smelte godt i ca 10 min.
Tilsæt smørret og rør godt rundt.
Tilsæt kartoflerne og lad dem små simre i ca 20 min, imens du jævnligt rør rundt i det.

Ingredienser:
2 søde kartofler - helst mellemstore
1/4 rødkål
2 gulerødder 
1 håndfuld granatæblekerner
2 håndfulde mandler
1/2 dl vand
Salt
1 spsk rapsolie
Saften fra en halv appelsin
1 tsk kanel
1 tsk agavesirup
Fløjet and fra www.veganer.nu
Fremgangsmåde:
Tænd ovnen på 200 grader.
Skær riller halvt igennem de søde kartofler, ligesom når du laver hasselbagte kartofler.
Bland en marinade ud af rapsolie, appelsinsaft, kanel og agavesirup.
Pensl de søde kartofler med marinaden på begge sider.
Bag dem i ovnen i 50-60 min.
Kom fløjet and med ind i ovnen de sidste 25 min.
Steg mandlerne på en pande i en 1/2 dl vand og rigelig af salt.
Steg indtil væsken er fordampet.
Skræl gulerødderne og riv dem groft.
Hak rødkålen fint eller groft.

Et drys solsikkekerner
Fremgangsmåde:

Dræn dåsen med kikærter for væske og skyl dem grundigt.

Ingredienser:
5 skiver brød
1 dl kikærtemel - kan købes i de fleste supermarkeder eller i helsekostbutikker.
2 dl sojamælk
1 moden banan
1 spsk kokossukker eller brun farin
4-5 dråber vanilje ekstrakt
Et lille drys salt
Vegansk smør eller plantemargarine til stegning
Fremgangsmåde: 
Mos bananen i en skål.
Tilsæt resten af ingredienserne til skålen pånær smørret.
Pisk det hele godt sammen - det gør ikke noget hvis der er små klumper af bananen tilbage, da det smelter på panden når brødet bliver stegt.
Smelt en god stor klat smør på en pande, for hver skive brød du steger.
Vend en skive brød i skålen og placere den herefter på panden.
Steg 3-4 min på hver side ved mellemhøj varme.

Ingredienser:
2 kakifrugter ( fjern skrællen ) - kan købes i de fleste supermarkeder eller hos lokale grønthandlere. 
1 stor banan
1 appelsin
600 ml sojamælk eller anden plantemælk
1 stor håndfuld isterninger
1 1/2 tsk havtorn pulver - købes i enkelte supermarkeder eller i helsekostbutikker.
Havtorn har en let syrlig og frisk smag og er derfor perfekt smagsgiver i smoothies, grød, juice eller bagværk.
Havtorn er rig på vitamin C + E + K, antioxidanter, omega-3, samt det sænker inflammationsniveauet ved betændelsestilstande i kroppen.

3 persillerødder eller pastinakker
1 rød peberfrugt
1 stort løg eller 2 små
1/2 stærk chili
3 fed hvidløg
1 tsk stødt ingefær - kan undlades.
2 spsk sesamolie
2 spsk sojasovs
1 1/2 spsk peanutbutter
1 spsk ahornsirup 
1 spsk ketchup
1 1/2 tsk røget paprika
Kværnet peber
Fremgangsmåde:
Skær tofuen i små tern.
Snit løg og chili fint og pres hvidløgene.
Skær peberfrugt og persillerødder i små tern.
Kog quinoa, ris, bulgur eller pasta.
Varm sesamolien op på en pande og svits løg, chili, hvidløg, tofu, peberfrugt og persillerødder heri i 5-7 min.
Tilsæt krydderier og steg i yderligere 1 minut.
Tilsæt bouillon, sojasovs og ahornsirup og lad det koge ind ved mellemhøj varme indtil væsken er halvt fordampet ca. 20 min.
Tilsæt ketchup og peanutbutter og rør det hele godt sammen i et par minutter indtil du får en cremet konsistens.

En Buddha bowl er en helt almindelig salat, som er anrettet med ingredienserne opdelt, så det ser lækkert ud. 
Dette er en super lækker og indbydende måde og serverer en salat på!
Du kan selvfølgelig varierer i ingredienserne, lige som du har lyst! 
Du kan nyde denne her skønne ret både til frokost og aftensmad. 
Her er en af mine bud på, hvordan du kan lave en Buddha bowl.
Opskrift til 2 personer.
Ingredienser:
1 Butternut Squash eller en sød kartoffel
1 dåse kikærter
2 håndfulde grønkål eller spinat
2 dl quinoa, bulgur, ris eller perlespelt
2 dl frosne ærter
1 squash 
1 broccoli 
1 avokado
Fremgangsmåde:
Tænd ovnen på 200 grader
Skræl din Butternut Squash eller sød kartoffel og skær den i små tern.
Placere dine tern i et ildfastfad og vend dem i lidt olie og krydderier - jeg bruger røget paprika, hvidløgspulver, salt, peber og lidt stødt chili.
Dræn kikærterne for væske og skyl dem grundigt.
Smut skallen af kikærterne ( ligesom når du smutter mandler ) da dette gør, at de bliver lidt mere sprøde når de bliver bagt i ovnen.
Vend kikærterne i den samme marinade, som du vender Butternut Squash i.
Placere dem på en bageplade beklædt med bagepapir og fordel dem jævnt ud.
Bag butternut squash i ovnen i 45 min.
Bag kikærterne med de sidste 30 min i ovnen.
Forbered imens de andre ting.
Kog quinoaen efter anvisning på pakken ca 18-20 min.
Riv broccolien groft, så det bliver helt fint.
Damp ærterne.
Skær din squash i skiver eller tern.
Skyl grønkålen.
Skær avokadoen i skiver.
Anret til sidst det hele på en stor tallerken eller to mindre tallerkener.
Du kan også vælge at lave en dressing og komme henover.

Ingredienser:
25 gram gær
300 ml lunken vand
300 gram grahamsmel
270 gram fuldkorns hvedemel eller alm hvedemel for en mindre grov udgave.
1/2 dl rapsolie
1 spsk agavesirup
1/2 tsk salt
Fremgangsmåde:
Opløs gæret i det lunken vand.
Tilsæt olie, salt og sirup og rør rundt.
Tilsæt melet lidt ad gangen og rør dejen godt sammen.
Stil dejen til hævning et lunt sted i 1 time.
Form 4 burgerboller og placere dem på en bageplade beklædt med bagepapir og lad dem efterhæve i 30 min.
Pensl bollerne med plantemælk eller vand og drys sesamfrø henover.
Bag dem i ovnen på 200 grader i 15 min.
Opskrift på marineret bagt Portobello svampe:
Ingredienser:
4 Portobello svampe - der går en til hver burger.
3 spsk rapsolie
2 tsk røget paprika
1 spsk alm paprika
Salt & peber
1 spsk sojasovs
1 tsk hvidløgspulver
1/2 tsk stødt chili - kan undlades. 
Fremgangsmåde:
Bland alle ingredienserne til marinaden i en skål.
Skær dine Portobello svampe i skiver og vend dem i marinaden.

Ingredienser:
2 store søde kartofler 
1 pakke glasnudler ( kan købes på nettet og i flere supermarkeder )
2 avokadoer
450 gram fast tofu
1 løg
2 fed hvidløg
2 spsk sojasovs 
2 spsk ketchup 
2 spsk olie
1 spsk ahornsirup 
60 ml peanutbutter
250 ml grøntsagsbouillon 
1/2-1 tsk Sriracha chili sauce ( kan købes på nettet og i de fleste supermarkeder )
Fremgangsmåde:
Skrub de søde kartofler rene og halvere dem på langs så du får 4 halve.
Pensl dem med lidt olie og placere dem i et ildfastfad med skindsiden opad.
Bag dem i ovnen i 50-60 min ved 200 grader.
Lav imens tofu peanutsovsen ( opskrift fra @the_buddhist_chef )
Kom til sidst glasnudlerne i en stor skål og hæld kogende vand henover.
Lad dem trække i 3 min.
Skær din avokado ud.

Her har jeg lavet en lækker og cremet overnight chiagrød med peanutbutter, brombær og kanel stegte æbler!Chiafrø har et højt indhold af kostfibre, omega-3-fedtsyrer, protein, calcium, jern og antioxidanter!
Opskrift til 1 person.
Ingredienser:
1 spsk chiafrø - kan købes i stort set alle supermarkeder.
1 dl rismælk, sojamælk, mandelmælk eller kokosmælk @plantebevaegelsen 
3 spsk ahornsirup 
1 spsk peanutbutter
1 drys salt
Topping:
1 æble
1 spsk kanel
2 spsk ahornsirup
1/2 dl vand
Brombær
Fremgangsmåde:
Rør ingredienserne til chiagrøden godt sammen i en lille skål og læg låg på.
Stil det på køl natten over.
Næste morgen rør du lige rundt i det et par gange.
Skær æblet i små tern .
Steg det på panden sammen med vand, sirup og kanel i 10 min.
Servere chiagrøden i et glas eller i en lille skål og top det med æbleblandingen og brombær.

Vegan spanish omelette is so delicious and tasty - much love to you all😘
Recipe➡️ 120g chickpea flour, 240 ml water, 1 tsp black salt ( Kala Namak ), ground pepper, 1 onion ( sliced ), 2 gloves garlic ( minced ), 1 red bell pepper ( chopped ), 450g potatoes ( thinly sliced ), oil for frying.
Method➡️ Mix chickpea flour, black salt, pepper & water into a bowl & stir well.
Heat 1 tbsp oil in a frying pan & fry the onion, garlic & bell pepper 5- 10 min & add into the bowl of chickpeamixture.
Fry potato slices in a frying pan for 6-7 min.
Add into the bowl of chickpeamixture & stir well.
Add the mixture into a frying pan & fry for 5 min on each side with a lid on.
Use a plate to turn around the omelette
Let it cool for 5 min😘👌🏻🌱

Her har jeg lavet veganske taco med sojagranulat, som er godt stegt i løg, hvidløg, krydderier, ketchup, sojasovs og sirup
Opskrift til at fylde 20 tacoskaller
Ingredienser:
200 gram champignon 
1 gulerod
180 gram sojagranulat
3 dl grøntsagsbouillon 
1 løg
2-3 fed hvidløg 
1 tsk røget paprika
1 spsk ahornsirup 
3 spsk sojasovs
2 spsk ketchup 
Salt og peber
Pynt med forårsløg, chili, avokado og pres limesaft udover til sidst
Fremgangsmåde:
Hæld sojagranulaten i en skål.
Varm 3 dl vand op i en gryde og tilsæt 1 grøntsagsbouillonterning når det er tæt på kogepunktet.
Rør rundt og opløs terningen heri.
Tilsæt bouillonen til skålen med sojagranulat og lad det trække i 5 min.
Pil løget og snit det fint.
Pres hvidløgene.
Skræl guleroden og hak den fint.
Børst jord af svampene og hak dem fint.
Varm 2 spsk olie op på en pande og steg løg, hvidløg, svampe og gulerod heri 5 min.
Tilsæt krydderier, sojasovs, ketchup og ahornsirup og rør godt rundt.
Tilsæt sojagranulaten sammen med det overskydende væske fra skålen og lad det hele koge ind i 25 min.
Varm tacoskallerne et par minutter i ovnen.
Fyld skallerne og pynt dem med chili, forårsløg, avokado og limesaft👌🏻 .

Ingredienser:
1 stor banan
3 dl hvedemel
4 dl plantemælk
2 spsk rørsukker
1 tsk bagepulver
1 tsk vanilje ekstrakt
1 spsk chiafrø
1 drys  salt
smørbar fra @plantebevaegelsen  til stegning
Fremgangsmåde:
Blend det hele til en ensartet masse.
Varm en pande op og smelt en klat smør for hver pandekage du laver.
Steg dem i 3 min på hver side.

Jeg spiser havregryn hver morgen, da det giver mig en dejlig mæthedsfornemmelse i op til 4 timer, og så er det bare super simpelt og lækkert👍🏻
Jeg topper det gerne med frisk frugt såsom blåbær, hindbær, brombær, banan, æble, kiwi, pære, vindruer eller melon og en klat peanutbutter eller hakkede mandler.
Havregryn er fulde af gode kulhydrater, som giver dig energi til en lang dag. Havregryn indeholder mineraler og vitaminer B og E.
Herudover er havregryn også rig på proteiner, som giver mæthed.
Hvis du spiser 100 gram havregryn, dækker du en tredjedel af dit daglige behov for fibre. 
Fibre hjælper også på fordøjelsen.
Ingredienser:
1 dl havregryn 
2 dl plantemælk ( sojamælk, rismælk, havremælk eller mandelmælk )
Frugt efter eget valg
Peanutbutter/ hakkede nødder
1 spsk agavesirup 
Mørk chokolade hakket groft 
Fremgangsmåde:
